Iberico and other cheese from milk mixtures
Cheese form milk mixtures are becoming more and more popular. It is most often produced from two or sometimes even three types of milk. The most popular mixture is the combination of cow and sheep milk, but goat milk can also be added. Milk mixtures make the cheese acquire an interesting flavour. Its taste may be milder or more intense, depending on the type of milk and its proportions in the particular cheese. Iberico One of the most popular cheese produced from milk mixtures is Iberico. It is a Spanish cheese. Iberico is made from a perfect blend of three types of milk: cow, goat and sheep. Its maturing can take up to a year. Its taste is slightly spicy, nutty, wit addition of herby hints. It has a buttery texture. Manouri Another cheese based on milk mixtures is Manouri. This cheese is obtained as a side product during the production of feta cheese. Manouri is a fresh and soft cheese with creamy texture. Its flavour is usually compared to joghurt with nutty or slightly citrus hints. Manouri’s taste differs from feta – its is less salty and has a different fat content. More fat makes Manouri’s texture more velvety. Balkan cheese Balkan cheese is produced from sheep milk with the addition of cow and goat milk. It has an intense, slightly salty taste. A high fat content makes it easy to slice. The Balkan cheese is perfect for salads. Bryndza Bryndza is an original, Slovakian cheese produced from sheep and cow milk. It has an intense flavour and creamy texture. And it’s the texture that makes bryndza perfect for filling or as an ingredient of any kind of cheese spread. Halloumi Halloumi is a semi-hard cheese based on cow, goat and sheep milk mixture. It comes from Cyprus. It is most often grilled, however, during the winter period it can also be fried or baked. Halloumi retains its unique flavour and texture when kept in brine with addition of dried mint. Halloumi is perfect served hot, as, notwithstanding the temperature, it does not melt but mainatins its original form. Cheese based on milk mixtures originate from many parts of the world. Each of them is unique in taste, thanks to the balanced mixture of milk. The various recipes for its preparation cause the cheese to positively surprise the consumer and guarantee an interesting altenrative for cheese based on one milk type.
