Despite its brittle consistency, it melts easily in the mouth and melts well under the influence of temperature. A wonderful ingredient in sandwiches that will work just as well on a cheese board. Many people can not imagine cheese sauce without it. It goes well with Bourgogne and Bordeaux wines.
