RICOTTA SALATA CHEESE
Whey cheese from pasteurized sheep’s milk. Although it is made on the basis of fresh salted ricotta, it has a completely different consistency – hard and compact. This is the result of several weeks of ripening, which adds character. In Sicilian cuisine, ricotta salata is a standard ingredient, used in the classic recipe for pasta alla norma. Ricotta salata is often added to salads as well. Since it does not melt, it is served by wiping with flakes for a ready-made dish.
